Our Favourite "Recipes"

Coriander-Basil-Parsley Pesto

1 bunch Coriander (cilantro)
1 bunch Basil
1 bunch Parsley
1/4 cup lightly roasted pine nuts
1 tablespoon lightly roasted garlic (optional)
1/2 cup basil olive oil (from VOM FASS of-course)
salt to taste (or grated parmesian cheese)

Place all ingredients (except the basil oil) into a food processor. Turn on processor and slowly add the basil oil until you get a smooth paste. Serve with pasta, toasted bread, corn-chips etc.

Note: If you are planning to keep this in the fridge (up to a week at most), add the cheese only to the portion that you are serving up.
